Food safety training and management

Food business operators must ensure all food handlers are supervised, instructed, and/or trained in food hygiene relevant to their specific work. 

The required level of knowledge must be appropriate to the food handler's work activity and the competence needed to perform it safely.

Training providers

Refresher training

If you completed the Basic Food Hygiene Course more than three years ago, we advise you take a half-day refresher course to ensure you're up to date with the latest developments and good practices.  

Other training

The Food Standards Agency (FSA) offers free online training courses to help you and your business comply with food hygiene and food standards. The FSA does not provide a food hygiene course or certificates.

Food safety management 

All food business operators are required to hold an appropriate written food safety management system in place. This system must be based on Hazard Analysis Critical Control Point (HACCP), which helps prevent problems rather than reacting to them.

Businesses can use the Safer Food Better Business packs by the FSA to comply with food hygiene regulations.
